This is a rich
tart, although a combination of
smoked haddock and
leek is more traditional in practice
smoked mackerel is more easily available . We seem to get leeks in the vege-box all year round , I have made lovely
leek pea and feta frittatas before but I really love making tarts and quiches there is something rustic and elegant about them, usually eaten with a big leafy salad but new potatoes would also work well too.
