This is a beloved family recipe. My dad used to make this quick spicy stir fry and would serve it with steamed rice and creamy lentils. Leeks are a tender, edible member of the lily family. They have a mild onion taste with a slightly sweet edge and look like over-grown green onions (scallions). Look for slender, straight leeks.
