I love soups and make versions of this recipe often in the cold months. Sometimes I add rice noodles to this
soup to make it more filling but this time I didnt. The
tofu croutons are wonderfully crunchy and make this otherwise thin
soup rather satisfying. We had a huge bowl for dinner and I’m looking forward to eating the left over for lunch
