In Germany and Austria,
quark (or topfen, as it is called in Austria) can be found in any grocery store. It is a type of curd with similar nutritional properties as cottage cheese. However, it is smooth and with a consistency that is much closer to strained yogurt than cottage cheese, and it has no added salt.
