I made this
omelette with 4 egg whites, and one yolk (just for a splash of color and flavor). Had some extra
peppers and
turkey sausage, so I sauteed those together first in some EVOO and butter - then added the whites. Salt and pepper to flavor.
Over medium-high, I let the pan do the work on the bottom, then invert on a plate to flip, then slide into the pan to cook the other side for a moment.
