This was the result of another failed attempt at making sweet potato chips. One day I shall figure it out, but during this time, I didn’t have the patience. I kept burning small batches and I finally gave up. I still had a pile of thinly sliced pieces of sweet potato.  So I chopped them into sizable pieces and piled them all in a bowl. Mixed in an egg, some flour and some green onion. and baked them in the oven. Yummy deliciousness of a nearly wasted veggie. Makes 6-8 cakes Sweet (...)
