In the interest of
time, I can’t post these recipes just yet. But just to give you an idea of how I’m going to manage my
time between lots of class, lots of reading, and lots of commuting (3 hours a day, total), and still eat well (and cheaply), I’ll give a breakdown.
Over the course of the past Sunday afternoon/evening, I did the following:
1. I roasted a large bunch of beets. These are for salads or snacks or random meal-snacks when in a crunch.
