One of the goodies in my CSA box this week was a big ol’ beautiful
white pattypan squash. Usually
pattypan (also called scallop)
squash are small and cute, like a Polly Pocket. This giant
pattypan was about 7 inches in diameter. And even though it was pretty, I had no idea what to do with it. It was so rock-hard that I couldn’t even make a dent in it with my sharpest knife. Plus, I’m already up to my ears in
